- 4 cups berries (I used frozen blueberries and mixed berries)
- 1/2 c sugarr
- 1T corn starch
- 3/4 c powdered sugar
- 1 c Blueberry Ale (or any other fruity ale you like. I used Kennebunkport Blueberry Ale. Founder's Raspberry has a very jam-like taste if you like raspberries.)
Make sure you use a big enough skillet. Reduce the above to taste--about 15-20 min over Medium-High heat.
Add 2 more cups of berries and mix to combine
For the crust, you can either make your own with standard pie crust mix or use the pre-made dough. I used a small beer tasting glass to cut the right size for my mini muffin pans. It took about 2 individual pie crusts, rolled out.
Bake at 425 degrees for approx 10 minutes.
This recipe made 48 mini tarts and two little ramekins of filling.
